CHEESE PROCESSING MACHINE Mod. VI


Applications and operation:

The Cheese Processing Machine Mod. VI is designed to produce spreads or “pasta filata” cheeses. Thanks to the shape of the mixing blade and to loop–breaking stems, product is stretched without compression in order to preserve its elasticity. This machine enables to be ready with a vat filled with raw materials, to hook it quickly, to process the cheese and to change it without unloading. In this way it’s possible to increase the number of working cycles per hour.



Construction features:

  • Compact structure entirely made of AISI 304 stainless steel.
  • Fix top with hermetic closing on gasket.
  • The mixing blade has a suitable shape to help product stretching.
  • Mixing blade rotation by two speeds gear motor.
  • Mechanical seal on mixing blade shaft.
  • No.2 steam injectors.
  • No.1 stem housing a PT100 probe. It is wired to a digital thermostat that regulate steam injection into the product.
  • Hydraulic unit housed inside the structure. It powers hydraulic cylinders that lift the vat.
  • Inverter to soften the lifting speed during start and stop.
  • Timer to set cycle working time.
  • Electrical switchboard with control panel housed inside the structure.
  • Safety devices in compliance with CE Directive.

Attachments:

  • Process water automatic loading unit provided with Batch controller and litre-counter.
  • Vacuum equipment.
  • Adjustable mixing blade rotating speed from 0 to 100 r/min by inverter.
  • Temperature recorder. It shows on a colour graphic display melting temperature trends which are recorded and coded progressively with production date.
  • PLC and touch screen display to control automatically the working cycle.
  • Interchangeable vats on wheels.
